Black Pearl mushrooms - also known as Black King Trumpets - have a thick, short stem and wide cap or smaller versions as clusters. A hybrid between King Trumpet and the famous Blue Oyster, they bring the best of both mushrooms into one!
They are known for their meaty, soft texture with a mild and delicate flavor. A new favorite of vegetarians as a meat substitute, it’s texture has been compared a slightly less-firm version of the traditional King Trumpet.
To prepare large individuals for cooking, divide each mushroom either lengthwise in half or quarters, or slice into inch long medallions. They are commonly pan-seared with a variety of seasoning such as teriyaki. They can be grilled, braised or sautéed over slow heat just as you would any other Trumpet, or prepared in any manner you would the Blue Oyster.
Being an oyster species, they are still just as versatile as others - don’t hesitate to use this mushroom in any way your imagination can come up with!
